The Story Behind This Cook

Every Aussie has memories of a family roast, but this one’s a little different. Instead of firing up the oven, we took a two-and-a-half kilo leg of lamb and let the Flaming Coals Mini Spit do the work. Inspired by traditional flavours of garlic, rosemary, and olive oil, this cook adds the primal magic of charcoal. The crackle of the coals, the slow spin of the spit, and the aroma of lamb basting in lemon and oil – it’s an experience that beats the standard roast hands down.

One challenge with spit-roasting lamb is balancing the bone on the skewer. If you find it tricky, ask your butcher to debone and truss it. Another option is to cook the deboned leg flat in a rotisserie basket. Either way, this cook is versatile and foolproof, even if you’re new to spit roasting.

Ingredients

  • 1 x 2.5kg leg of lamb (bone in or deboned)
  • 2 tbsp olive oil
  • 3–4 tbsp Flaming Coals Traditional Lamb Rub (or salt, pepper, oregano, thyme)
  • 4 cloves garlic, sliced into slithers
  • 4 sprigs fresh rosemary
  • 2 tbsp olive oil (for basting)
  • 2 tbsp lemon juice (for basting)

Step-by-Step Instructions

1. Coat the lamb in olive oil and season generously with Flaming Coals Traditional Lamb Rub.

3. Skewer the lamb securely on the rotisserie spit. If using a deboned leg, truss tightly or place in a basket.

4. Light your charcoal using a Flaming Coals Charcoal Starter Wand. Coals will be ready in about five minutes.

5. Mount the spit over the fire. Check heat by holding your hand at meat level – aim for about eight seconds before it feels too hot.

6. Baste lamb every 20–30 minutes with a mix of lemon juice and olive oil.

 


 

7. Cook for around 2 hours, or until the lamb reaches 58–60°C internally for medium.
