TOOLS & MATERIALS
THE PREP
First, let's go over the various ingredients. Prepare your pan, water, and rice, and cook the rice according to the package directions. If you know you want to make this ahead of time, cook the rice the day before day-old rice that's starting to dry out a touch works best for this - but cooking the rice just before is OK.
Next, heat the flattop to medium-high heat and your cast iron skillet to high heat. While those are heating up, start preparing the vegetables and marinating the beef.
Thinly slice the onion and cut the broccoli into bite-size pieces. Set aside a tiny slice of green onion for the finishing garnish. Then get yourself a mixing bowl. Add the beef tips to the pan, drizzle with olive oil, and coat with Dirty Bird Sriracha. Allow the beef tips to sit at room temperature for at least 10 minutes after coating them. In a separate bowl, whisk together the eggs and SPG until smooth.
THE COOK
Let's get started! Heat a drizzle of oil on the surface of the flattop after it is ready and the meat has rested. First, sauté the cut onions, then add the beef tips. Cook until they are done to your liking, then remove from the pan and place in a clean mixing dish. To taste, add more SPG.
The broccoli, peas, and carrots should be added to the flattop next. Season with Dirty Bird Sriracha and soy sauce, then sauté until done to your liking.
Pour in the beaten eggs and scramble until almost done (about 34 cooked). Add the cooked rice and frozen vegetables, as well as two to three teaspoons of oil. Mix in the eggs thoroughly. Finally, to taste, pour with soy sauce, season with SPG and Dirty Bird Sriracha, and simmer until everything is combined.
THE PAYOFF
While the rice is cooking, pour the Sticky Asian Rib Glaze over the beef points in the bowl. Toss well to coat. When the rice is done, put it on a plate (or small bowl) and top it with the meat tips. Drizzle with additional Sticky Asian BBQ Glaze and top with green onion to taste.
