You finally have your new Parrilla BBQ, you’ve got your fire going and have slapped down a prime cut of meat… but what next?
You may be wondering what height you should set your grill to, but unfortunately, there is no simple answer. Just like any time you cook (especially with physical fuel), there are just so many variables to take into account; What kind of wood or charcoal are you using? What’s the ambient temperature? How protected from the wind are you? Not only what animal are you cooking but what cut of that animal is it? Not to mention the level of doneness you’re after.
There are of course some rough guides you can use, like if you’re going for some low and slow ribs, being able to hold your hand at the height of the grill for 10 seconds is a good start, but when that wind pushes through, feeding your fire oxygen before abandoning it and leaving less fuel for the rest of the cook, you have to adapt.
If you think you have too much charcoal under your grill and run the risk of burning your food, raise your grill higher. If you’re approaching the end of the cook and don’t want to add more charcoal because it’d be a waste, lower it down and get that extra mile from what’s already in there.
The most important thing is to be vigilant and understand what you’re cooking and the environment that it’s in. Tools like a Meater or an Instant-Read Thermometer can help track where you are in the cook and aid in knowing whether you need to raise and lower the grill.

All you need to do is hold the height adjustment wheel with one hand, release the stop lever with your other hand and then gently turn the wheel till your grill is at the desired height. When you’re happy with the height, simply lock the stop lever back into place.
