Unboxing & Preparing Your Parrilla

Start by clearing a flat working area and giving yourself enough room to move parts around comfortably. Open the box and carefully remove all items from the packaging. Lay out the hardware, bolts, brackets, and panels so you can easily see what belongs where. Taking a moment here keeps your build smooth and stress free.

Building The Base And Adding The Wheels

Once everything is unpacked, place the Parrilla base upside down. Align the wheel bracket plate with the pre-drilled holes and bolt the bracket into position. After the bracket is secured, screw the side supports into the same plate. When both supports are fixed firmly, attach the four caster wheels to the base. This gives the Parrilla the mobility it needs around your outdoor area. Once the wheels are on and tightened, flip the base so it is standing upright. Add the front and back supports and bolt them to the side supports to form the full trolley frame.

Securing The Grill Assembly

Inside the main tub, you will find fire bricks set around the grill assembly upright bracket. Remove the bricks carefully and keep note of how they were placed. Take the full grill assembly and lower it into the tub bracket, securing it loosely with bolts for now. Once it is sitting in place, align the grill assembly support bracket on the outside of the tub and screw it in. Tighten all the bracket bolts so the grill assembly is fully secured.

Put the bricks back into the tub exactly as they were. With a second person helping, carefully lift the main tub onto the assembled trolley and bolt the tub down so it cannot move or shift.

Adding The Rotisserie Components

With the tub fixed in place, attach the rotisserie bracket and the rotisserie support brackets to the grill assembly frame. These allow you to use a full rotisserie setup on your Parrilla when you want to combine open-fire grilling with the flavour and tenderness of spit roasting.

 

Installing The Door Supports, Guides And Wheel

Next, bolt the door support brackets to the trolley. After that, bolt the grill guides into position on the tub. These guides help move the grill frame smoothly as you adjust the height.

Now, screw the wheel handle onto the height-adjusting tube. Slide the main wheel onto the tube, then secure it with the supplied nut and bolt. Bolt the brake lever into place underneath the wheel so you can lock the height adjustment whenever you need stable control.

Finishing The Frame And Adding Accessories

Screw the side tables into position to give yourself workspace for tools, trays, and food. Place the firebox onto its support inside the main tub, ready for loading charcoal or hardwood splits.

Move the grill frame into place and attach the wire loops over the grill frame hooks. Once the frame is secured, add the grills and the drip tray to finish the setup.
