Gravity feed smokers work with the help of gravity feeding charcoal down a long charcoal chute into a burn chamber. This burn chamber has an opening into the cooking section of the smoker and that is where the smoke and heat enter, cooking and smoking your food before it exits the cook chamber through a chimney. Once the top and bottom dampers have been set up to produce your desired cooking temperature, you can then generally expect a hassle-free long smoking time without the need to constantly tend to your fire. Depending on your desired cooking temperature, these gravity feed smokers can burn for up to 24 hours without refuelling and that is why so many pubs and restaurants are now using them.
