The secret is in the raised rails, which quickly transfer heat upward to cook foods quickly and evenly, similar to an infrared cooker.
While your PK is designed to prevent flare-ups when the capsule is closed, GrillGrates prevent flare-ups from burning your food when the lid is open. This is excellent for cooking steaks at extremely high temperatures and achieving a steakhouse-quality sear. GrillGrates are constructed of hard-anodized aluminium, which conducts heat more effectively than cast iron or stainless steel.
