This Australian-made southern fried chicken coating from Atomic Chicken turns buttermilk-marinated chicken into golden, crunchy fried chicken right in your own kitchen. How much coating do I need?
Half a pack (250 g) is enough to coat 6 to 7 chicken pieces, so each 500 g pouch covers two batches.
Do I need buttermilk?
The recipe on the pack marinates the chicken in 600 ml of buttermilk with 2 tablespoons of salt for 2 hours or more, ideally overnight. A thick buttermilk coat helps the coating stick and creates the crunchy bits.
What oil should I fry it in?
The pack recommends sunflower, canola or peanut oil. Fry 2 to 3 pieces at a time and don't overcrowd the fryer or pan.
