Cyprus Grill - 3 Skewer Souvla

In Australia, we refer to the traditional Cypriot BBQ the Foukou as a Cyprus Grill or Cyprus spit and that basically describes where it's from and what it does. The Cyprus Grill is essentially a compact charcoal spit roaster with 3 or more skewers that rotate together.

They were traditionally used to slowly cook large chunks of pork, lamb or chicken over charcoal. The skewer is passed through the meat and then slowly rotated, as the meat starts to cook it self-bastes itself with all the rendered fat and this is your typical Cypriot Souvla or kontosouvli.

Today in Australia, Flaming Coals has developed baskets, cages and disks for the Cyrpus grill making it one of the most versatile compact charcoal spits on the market. You can cook veggies, chicken wings and more in the cage, chips, spuds or chestnuts in the tumbler or easily carve gyros by using the gyros plates. The grill is also height adjustable allowing you to use this spit as a charcoal BBQ. You can cook chops or steaks and adjust the height of the grill from the lump charcoal to suit your cooking style.

So, what exactly is a Cypriot BBQ, Cypriot Grill, Souvla BBQ or as we call them, a Cyprus spit? A Cyprus spit rotisserie is a type of rotisserie that is specifically designed for cooking meat (and vegetables on rare occasions) on multiple skewers at once. The Cyprus spit roaster consists of two parts: the base, which holds the charcoal, and the rotisserie itself, which has two independently operated motors. One controls the 3 or larger top skewers, and the other controls the mini kebab-style skewers that go across the shorter length of the Grill. The meat and vegetables are placed on the rotisserie and then rotated over the heat source, ensuring that it cooks evenly on all sides.

One of the best things about Cypriot Grills is that they are very versatile. You can cook virtually anything on a Cyprus spit roaster, from chicken and steak to vegetables and even fruit! And because the food is cooked slowly and evenly, you can be sure that it will be juicy and flavourful every time. A Cyrpus BBQ may look to be a small spit but the 3 skewers give you enough length to skewer plenty of meat, and the grill is big enough to cook a lot of sausages and the kebab skewers will have you tuning over kebabs every 5 minutes.

If you're looking for a unique rotisserie and one that can BBQ anything you need to, then a Cyprus spit roaster is definitely the way to go! Not only will your food taste amazing because it's cooked over charcoal, but you'll also have a lot of fun cooking it on the rotisserie. So what are you waiting for?
