The benefit of using a galvanised charcoal sheet in your spit roaster rather than lighting a fire directly on the base of your spit is that the galvanised sheet takes the brunt of the heat and therefore protects the base of your spit roaster. It also catches the fat and oil from your meat as it's cooking. The galvanised sheet makes it easier to clean to clean your spit as it can be easily removed and hosed out. It is also a lot cheaper to simply replace the galvanised sheet rather than replacing the whole base of your spit roaster.
