Start by preheating your smoker to 350°F or 176°C. We are using the SnS Kettle set up for indirect cooking using the SnS Deluxe charcoal basket. We are using a cherry wood lump for that smokey flavour!

Next place your potatoes into a large bowl and evenly coat them with olive oil. Add your finely chopped rosemary and Kosmos Q SPG rub. You can go heavy here! Toss the mixture to ensure they are evenly coated.

Next place your potatoes into the Flaming Coals Cast Iron Skillet and add a layer of parmesan cheese.

Place the skillet onto the cooking grate of the smoker and smoke them for roughly 1 hour and 20 minutes. Every twenty minutes spin the skillet to ensure there’s no one side getting more heat. Add more butter and parmesan cheese as desired.

1 hour and 20 minutes or until they turn golden brown and probe like butter. Get them out of the smoker and serve them with your favourite condiments, enjoy!
